——————– The Wickwoods Rump Steak Burger ——————–

We’ve been quizzing our Head Chef Neil Ruzicka about his delicious Homemade Rump Steak Burger – available on our À La Carte menu.

Wickwoods Country Club Food

PREPARATION – In the kitchen, our burger is created using tender rump steak sourced from Gunne butchers (Established 1928), it is minced and combined with onions, thyme, rosemary, paprika, salt and pepper, horseradish, English mustard, brown sauce and breadcrumbs – all in which make for one tasty burger.

While some people will use egg yolks to bind the burger patty together, Neil prefers not too instead uses the combined moisture from the meat and ingredients.

To top the burger, a delicious rasher of Bacon is topped with Goodweald Cheese sourced from the Traditional Cheese Dairy from Stonegate (near Goodwood).

COOKING IT – The burger patty is cooked in a pan to give it a nice colour and to lock in the moisture, and then given 10 minutes in the oven before it’s ready to eat!

The Bacon and the Goodweald Cheese is briefly placed under the grill for 6 minutes and then is placed on-top of the burger patty as it is cooking, combining the flavours.

THE FINAL TOUCHES – The Burger has been cooked and is finally added to the seeded bun on top of fresh salad, onion, tomato and gherkin, served with fries, our smoked tomato ketchup and a side salad. Delicious!

——————————— Cook one yourself? ——————————–

Why not try making some burgers yourself? Burgers make for a great meal and people often don’t try to make their own. Perhaps try creating yours with different flavours? Neil has previously used red onion, coriander, chili powder, shallots, parsley and several different types of mustard.
